The Definitive Edition improved Kingdom of Heaven from 2* to perhaps a 4* movie. By putting the running time to over 3 hours gives scope to actually explain a lot of what is going on.

Of course, those who were perplexed by the original cinematic cut may not want to risk sitting for another 3 hours

I've been meaning to watch the Director's Cut for quite awhile, but I was so disappointed in the theatrical cut I haven't gotten around to it. I've heard it's much, much better though.

Trying to tackle the Crusades in 90 minutes is never going to work.

Its definitely worth it. The combination of religious hatred for the enemy yet still retaining the air of chivalry is intriguing, particularly with the interactions with Saladin.
