He took advantage of a beat down opponent to win a title.
That's how Punk won it, and everyone thought it was great.
And it makes sense to have him in the match, as he would have been the next guy in line from Raw (actually, Rey was the next guy in line).
If you weren't ging to make this Sid's comeback, then Jericho was right in my opinion.

sweet. We got a great heel stable on raw now. Triple h is gona fued with Big Show probally (thats a meh). Matt Hardy got the highest mid card belt out there. and for some reason Punk got stripped of the title and Jericho got a title (finally)
I will give this ppv a 4.8/5
ECW Scramble - Was entertaining except for Mark Henry being in it
WTTC - Great match (IMO). TP stole it then a great heel stable was formed
WWE Scramble - Was great till HHH came out. It actually looked like Jeff was gona win.. till Trips stepped in at 0:10 or something and pedigree'd MVP (Jobbed) for the win. TBK did great in the match
Promo with Punk - A heel stable was established. Punk was basically stripped of the title
Diva Thing - Perfect time to take a piss and get something to eat
WHC - first 19:50 were a bore. Then Jericho came out and got owned and crawled in during the last 10 seconds and got the win.
Ohh and
HBK va Y2J - Why the fuck did the ref stop the match. The rules were pin fall or submission?

I agree they don't need to carry that feud any further, but I could see them dragging it out for one more match, with HBK targeting the title, vowing to take the most precious thing in Jericho's life or some shit, and like you said it would most likely happen at Cyber Sunday, with the ladder match being one of the options to vote for

I didn't, he was boring as hell and took a backseat to the Y2J/HBK fued, at least now we have a champion with some charisma. I would have liked Cena as champ over Punk.

This is how I see this playing out.
The new heel stable feuds with Punk/Cryme Tyme until Randy gets back and can properly feud with Punk. I think this stable can be GREAT as there is tons of talent there.
Jericho I think will have one last match with Michaels...3 Stages of Hell for the title.
Batista & Rey will continue the feud with Kane.
JBL can go to hell.
Show/Taker was clearly set up by that, and unfortunately Vickie is gonna remain around at least for now.
HHH I assume will enter a program with Jeff Hardy that may or may not result in Hardy winning the title, but will establish him as a main eventer again.
