Now i think that is a rather cool idea if your favourite video game characters came to life what would be their proffesion. EG:

Altiar assassins creed: Proffesoinal olympian.

Alex Mercer Prototype: chef look at those cutting tools.

I think Mario and Luigi could clearly aim for something better than plumbers. With technology these days, they should aim for something like professionals. Maybe tech support. They shouldn't make themselves stick in a low standard world. They should 'aim high.' LOL If they did a resume and put throw fireballs, save princesses, steal coins, bonk lizards, slay dragons, I'm sure they'd be middle management material.
