Way late on this, but I'm going to answer these without looking at what others have said. I swear it. Seriously. I mean it.
1. Who has been in the most opening matches in mania history? It's a four way tie so name all four.
I know Big Show is one of them. I believe Finlay and HBK are in there as well, can't think of the other one.
2. Name the five people who successfully defended their titles in the main event at mania. Main event = final match.
Does Yoko at WM 9 against Bret count? Technically, that wasn't the very last contest. Whatever.
Hogan, HHH, Cena, Miz and, I guess, Yoko.
3. Name the people who have challenged for more than one title at the same mania. There is more than one but I won't say how many.
Kurt Angle, Chris Benoit, Chris Jericho.
4. Name each person that Sensational Sherri accompanied to the ring for a mania match. Again, more than one but I won't say how many.

You've got three. The fourth is stumping people.
Your first four are correct. Yoko was challenger against Bret at WM9 not champion. The fifth is Ultimate Warrior who successfully defended his IC title against Hogan at WM6
Benoit and Jericho are correct. Both at WM16. Hogan and Christian are the others. Hogan at WM9 for the tag and world title and Christian at WM18 for the European and Hardcore title.
Half correct. Two others are Honky Tonk Man at WM4 when she played Peggy Sue and Tatanka at WM9.
Correct, against Lex Luger at WM10.

The three you listed are correct. The fourth was an active participant in the opening match and not a manager.
