This is the device they use for it, and they use this device for a lot of first person sound work in television and film, though first person shots are fairly rare. This device has a microphone in both ears, and it records sound exactly as a human would hear it. The left ear records sounds that will play strongly in the left speaker, and right ear sounds play louder in the right speaker. Basically, what this dummy microphone head hears, you'll hear.

How fucking awesome is that?
