I actually have Hulu Plus, for the sole purpose of watching NXT, and old episodes of ECW and Smackdown. If you start with 2013, you'll get the end of Rollins title reign and the beginning of Big E, which also marks the Shield leaving the company. Probably a good place to start. Also marks the tag title tournament.
Some people like the theatrics of finishers, but I prefer a quick, realistic end. Not that wrestling is realistic, by any stretch of the imagination, but my ideal finisher is quick, easy to set up, and deadly. I've always liked Randy Orton's RKO, for example. Big Show's KO Punch is another I appreciate, because I never liked the choke slam. I think a 500-pound giant punching you in the face is enough to startle your jimmies. Marked out hard when Sheamus was the first to kick out of it; that match in general was so damn good. Speaking of which, the Brogue is another I like. Simple and gets a really good pop. Sweet Chin Music, etc etc. And pretty much, any submission that isn't over-used and can be set up by working over a body part throughout the match. ADR's Cross Arm Breaker is my current favorite.
Finishers I don't like: Christian's Killswitch/Unprettier. It just takes too long to set up, and realistically I feel like you could easily get out of it with very little effort. The end result is deadly, but it just looks ridiculous. Rey Mysterio's 619, because 90% of his victim's turn around and see it coming. More their fault than his. Be a man. Get kicked in the face. The Angle Slam, after he stopped using it to win matches in TNA. Seriously, somebody kicks out of that shit every single time now. He uses it as a signature move more than anything, and it's dumb.
