Hmm... I can't exactly decide, since I enjoy both. Jericho is my favourite wrestler in terms of enjoyment and also due to entertainment in the ring. He can be whatever he wants, an exciting face or an evil heel. Undertaker on the other hand is a true legend. He has the streak and has beaten the best so many times. He can move great in the ring for a big guy, and his promos are epic.
So as my favourite I would choose Chris Jericho. I don't believe he would beat Undertaker in a match, but he would be the more entertaining of the two. He could talk circles around him and cut a much better promo. So while Undertaker will always be a legend, Chris Jericho will always be a true entertainer.

Don't mean to interrupt your little debate, but I have to agree with Jericho-aholic in that Jericho's is one of the WWE's top heels of the moment, as his promowork and ability to draw heat from the crowd at any time/in any way that he wants is almost unparalleled in the pro wrestling right now. His fluidity in his promos just makes you want to hear what he has to say, despite the fact that he's calling you a hypocrite. Thats quite a powerful heel.
