To clarify, that's his girlfriend on the left... and yes, all male Australians consistently wear Akubra's (a.k.a. "Cowboy hats" for you non-technical people) as we love to embrace stereotypes so tourists don't get confused between them and the locals. Please note that I currently have a tuft and goat's beard for facial hair: this photo was taken a while back.
