Being the 30th Anniversary, which feels like a much much bigger deal to me than it seems to to WWE. I would have liked to see them do an "Old School Headliners vs todays talent" type deal. Now, I'm normally NOT in favor of the part timers. However, I think that WM 30 fell in a unique point it the spectrum where they would have been able to pull it off.
My 12 Card 4 hour PPV would have been:
Diesel (w/Scott Hall) vs Randy Orton
Warrior vs Batista
Y2J vs Seth Rollins
Rikishi vs Big E
Triple H (With Vince) vs (w/Hogan)Sheamus
Taker vs Sheamus
Brock vs Roman Reigns
Rock vs Dean Ambrose
Steamboat vs Cesaro
Goldberg vs John Cena
HBK vs Daniel Bryan
Austin vs Punk
 
I wanna say first i am actually pumped for WrestleMania XXX, and I am planning to do the whole 6 hour experience. ( I like the extra analysis, and of course the WWE APP plug 100 Million times)

That is a good concept, but I believe that ship sailed, and probably could have been done at Wrestlemania 25.

I like your card, you have some interesting match-ups,

Steamboat vs Cesaro would steal the show (could you imagine?, that needs to be in Fantasy Warfare)

Not sure about Rock and Ambrose though, I'd switch it with Bray Wyatt vs Early Mankind
the promos write themselves.
 
Bray vs Early Mankind would be great, or Bray vs Jake Roberts could be amazing as well. Ric Flair vs Dolph might be entertaining.
 
In all honesty, I'm glad that WWE hasn't gone the route of turning WrestleMania XXX into some massive nostalgia event. I like that more attention has been placed on fresh faces like Daniel Bryan, Bray Wyatt & The Shield than they have in recent years. I know that Shield & Wyatt haven't been around, but I was using them as an example of "fresh faces" overall. Most of the top matches the past several WrestleMania events have been Taker vs. Triple H, Cena vs. The Rock, Cena vs. Batista, Taker vs. HBK, etc.

As for a WrestleMania featuring "old school vs. new school", it's an interesting concept but I don't see it panning out in theory, especially concerning most of the matches the OP mentioned. I'm also glad that the show isn't loaded down with part timers as it has for the past several years. The novelty of it's kind of worn off for me in most cases. For instance, allegedly, Goldberg seems to want Ft. Knox to come back and wrestle one more match. Also allegedly, he doesn't wanna job out if he does come back. In my opinion, Goldberg's certainly not worth it because he's not that huge of a star. Some of those matches also just don't seem all that interesting. For instance, Rikishi vs. Big E doesn't really seem like it'll put asses in seats. If Big E lost to Rikishi, a 48 year old man who hasn't wrestled in WWE for about 10 years and wasn't that big of a star when he did, all it does is make Big E look weak. If Big E went over, he's gained nothing. Warrior vs. Batista would probably stink up the place.

WWE should do a nostalgia show like that, maybe call it "Homecoming" or some shit. Don't do it on Wrestlemania. The NFL embarrassed itself for years by having old musical acts come out and look like shells of themselves during the halftime show. Nostalgia is cool and all but the ship has sailed on most guys who aren't already working a few shows per year.
