This one should be easy. For as many wrestler as there were that went from ECW to WWE, there had to be three times as many that went to WCW instead. The reise of ECW occurred at the same time as WCW dominated WWE in the ratings, so it was the smart move at the time.
Since I'm greedy, I'll list two, and quite possibly kill my own thread before it starts. The first choice, in my eyes, is Rey Misterio Jr. Not only did he go on to become one of the best luchadors (in America - don't kill me!), but he defeated some of the biggest giants the bookers could throw at him. He even made his time in the Filthy Animals not seem like a complete waste of time.
The second choice, is Chris Jericho. He left ECW for the bigger, better contract, and made it work. He had the Lionheart gimmick, one of my favorites all-time, and opened up his repertoire to a whole new style. He worked great as a heel, and even managed to stay away from any feuds that involved the nWo. Without his jump to WCW, we don't have the Y2J that we know and love today.
